Weavers Irish Gin is a craft dry gin produced by Echlinville Distillery in County Down, Ireland. Inspired by Ulster's 300-year-old linen-weaving heritage, this spirit is distilled using local Irish flax seeds alongside classic and floral botanicals—including juniper, pink grapefruit, lime, jasmine, elderflower, and rowan berries—yielding a cool, crisp, and velvety profile.
Food Pairing: Fresh oysters, smoked salmon, seafood tapas, mild creamy cheeses, goat cheese crostini, and light citrus-dressed salads.
Tasting Notes: Crystal clear in appearance with a smooth, soft, and velvety mouthfeel enhanced by genuine Irish flax seeds.
