This walnut-handled channel knife is made for cutting thin, even strips of citrus peel or chocolate. The 5 mm stainless-steel channel blade is sharp enough to remove the zest without taking much pith, and the tip can score wider peels when you need them. Full-tang, so it doesn’t flex, and the edge comes with a simple plastic guard for storage.
The handle is oiled American walnut, shaped small enough to grip like a paring knife. Two brass rivets hold it to the tang; there’s a hanging hole at the end. Overall length 7 in., weight 1.8 oz. Wash by hand, dry immediately, and rub the wood with oil now and then.
