In 2018, Penelope Bourbon was crafted and created in a classic American tradition – to celebrate an impending birth of a child - lol. Mike Paladini teamed up with his close childhood friend and neighbour, Danny Polise and they set out to discover and produce a Straight Bourbon Whiskey everyone could appreciate and enjoy. Thus the company was born.
The Toasted Series: After full maturation in charred new American oak barrels, Penelope Toasted Series Bourbon is finished in a new, heavily toasted barrel (Char 1). This is batch #25-394 and is aged 4 years.
Mash Bill: 75% Corn, 21% Rye, 4% Malted Barley
Nose: Brown sugar and cinnamon breakfast pastry.
Palate: Vanilla and graham cracker with hints of dried cherry fruit.
Finish: Savory roasted marshmallow finish and slight spice.
