Nc'Nean Quiet Rebels Simon is a limited-edition organic Highland single malt Scotch whisky released in 2025 at 48.5% ABV. Created by Nc'Nean distiller Simon Hewitt, this expression was initially matured in STR red wine casks before finishing in oatmeal stout casks from Scottish brewery Innis & Gunn. Rich and indulgent, it offers a distinctive profile of chocolate brioche, coffee fudge cake and cherry jam, complemented by buttery sweetness and gentle baking spices.
Food Pairing: Dark chocolate, chocolate brownies, roasted nuts, aged Gouda, cherry tart, coffee cake, buttery pastries or tiramisu.
Tasting Notes: Rich and chocolatey, with chocolate brioche, coffee fudge cake, cherry jam, buttery sweetness and gentle baking spices.
